Baked Chicken Fajitas

A quick and easy recipe for chicken fajitas. All I want to say is YUM! We love anything with a Mexican flare when it comes to food.  When we go out to eat Mexican, which isn't too often anymore, I always want to share an order of fajitas. Yeah, I'm not really willing to share but I will to help keep the cost down.

 Last week while trying to decide on my menu for grocery shopping day, I stumbled over this RECIPE. I love grilling fajitas but when I found this, I thought it would be a perfect recipe that my two men could make if they ever needed to cook without me. :)

This recipe is a super juicy dish, so if you don't want your fajitas spitting juice every time you bite them, then you'll need to drain your chicken, tomatoes, peppers and onions before serving or leave out the tomato juice altogether.

I did make a few changes to the original recipe. Changes for my family's liking.

~Baked Chicken Fajitas~

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into strips

  • homemade fajita seasoning - just sprinkle it over everything - give a good coating

  • 1 can diced tomatoes with green chilies (drain and reserve the juice)

  • 1 medium onion, sliced

  • 1 large bell pepper, sliced

  • flour tortillas

In a bowl place chicken, onion and bell pepper, tomatoes and spices. Mix until everything is coated well. Let marinate in the refrigerator for at least an hour.

Preheat oven to 400 degrees. In a baking dish, place chicken mixture. Add about half the tomato juice to the dish. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas.
