Hungry Man Breakfast Skillet
/Sometimes when we go out to eat, we like to eat breakfast foods. Breakfast for supper is a wonderful way to enjoy breakfast with everyone around the table. I’ll never forget the first time my husband ordered a breakfast skillet at the Cracker Barrel, it looked so good. He even shared a bite with me and oh, so yummy it was. The breakfast skillet is something I knew I could recreate at home. Since I feed men in my house, this dish has been named the Hungry Man Breakfast Skillet.

Being a frugalista, I love saving money by cooking breakfast foods for our supper. Since, Jamie and I are not breakfast eaters, we enjoy having these foods in the evenings. While I cook breakfast every morning for my husband, he also enjoys a laid back supper – The Hungry Man Breakfast Skillet fits the bill.

I love how this recipe works – it doesn’t require anything special or out of the ordinary. Add the ingredients you want to eat and enjoy.
I cooked 2 eggs for each of us and added shredded cheese to the other two plates since they are the big cheese eaters.
I know y'all think I'm creative on the names of my recipes, but sadly, I can't take credit for this. A sweet friend of mine named this recipe for me since I was lost on a name. :)
The Hungry Man Breakfast Skillet
Ingredients:
2 - 3 Tablespoons oil
3 - 4 potatoes peeled and diced
½ pound sausage
1 small onion diced
1 bell pepper diced
1 - 2 eggs per person
1 - 2 pieces bacon per person precooked and crumbled
salt, pepper, and garlic powder to taste
Directions:
Heat oil in a skillet and cook potatoes, onions, and bell peppers until tender and set aside to drain in another container. Add sausage to skillet, while sausage is cooking, chop it into bite-size pieces. In a bowl, whisk eggs until blended, pour over sausage and cook eggs until done. Add the potatoes, onions, and peppers back to the pan. Season and mix until everything is incorporated and serve.
